Batch Cooking…. Bore off.
That used to be my opinion of batch cooking,
but you know what… Now I love it.
Another thing that Slimming World has changed
within me.
Decided to share my bolognese sauce recipe as
it is a firm favourite and SYN FREE!!
I know everyone has their own take on this…
but carrots and celery do not belong in bolognese!

Bolognese of Dreams Recipe
INGREDIENTS:
(This is for batch cooking and makes approx 12
portions.)
2 Packets of 5% Beef Mince (I sometimes use Quorn,
up to you.)
3 Large Courgettes
3 Large Red Onions
2 Packets of Plum Tomatoes (approx. 12)
1 Packet of Mushrooms
6 cloves of Garlic
1 Large Packet of Fresh Basil
5 Tins of Chopped Tomatoes
1 Tube of Tomato Puree
2 Tbsp Dried Oregano
1 Tbsp Dried Mixed Herbs
1 Tsp Dried Garlic
1 Tsp Dried Onion
1 Tsp of Sweetener
Few Dashes of Balsamic Vinegar
Salt and Pepper (to taste)
Few sprays of Fry Light used for the frying
off the veg.
Water.
METHOD:
Dice the onions and courgettes. Fry them off
in a large pan with a couple of sprays of Fry Light.
Then dice the plum tomatoes and mushrooms.
Once the onions and courgettes are sweating
down nicely, add the mushrooms and tomatoes.
Cook down until golden.
Add in the beef mince and let then cook off
and get some colour.
Grate the cloves of garlic into the mix. (When
you grate the garlic you get a much sweeter flavour.)
Add in all the dried herbs, fresh herbs and
seasoning.
Give it a quick stir and make sure everything
is combined.
Then add in the chopped tinned tomatoes,
tomato puree and three tins of water as well.
Then add the balsamic vinegar and sweetener.
Stir and turn onto a low heat.
The longer you can leave this to cook the
better.
I prefer to make this in the morning and eat
it that evening, or the following.
Once it’s had at least an hour, taste and add
any additional herbs etc that you feel it needs.
That is literally it.
I serve mine with pasta, my HeXa cheese and a
salad.
Salad of rocket leaves and a salsa made of
finely diced cucumber, red onion, tomatoes, balsamic vinegar and seasoning.
If I have my HeXb left too (I usually eat that
bad boy in the morning) I will make some garlic bread to go with it.
My personal favourite is one of the Scharr
gluten free ciabatta rolls with some Fry Light sprayed onto it, seasoning,
garlic, herbs and then under the grill.
Super indulgent dinner that is Syn Free,
filling and delicious!
